Sauteed Zucchini and Broccoli

Long time no speak; sorry about that. I've been in rehab for my eating disorder, more about that on my other blog. I came home for the weekend though and was craving to cook; so I tried to cook healthy and made a bunch of vegetables. This is the first recipe, I love my greens with some texture and bite to them so I tried to not cook them until they were mushy. I chose this flavor combo but it would also taste delicious with honey and mustard. I have another recipe for spaghetti squash I will post as well, and while I'm away, have a  look at the many recipes on the blog.

Serves: 4-6
Time:25 minutes

Ingredients:
  • 2 zucchini 
  • 1.5 cup frozen broccoli
  • parsley tops
  • 1/2 yellow onion
  • 1 purple onion
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon chili flakes
  • salt and pepper
  • olive oil
How To:

  1. Chop onions and saute till translucent.
  2. Chop zucchini in half moons, a quarter inch thick, and add to pan. Saute until soft.
  3. Add frozen broccoli,saute until non frozen. 
  4. Add the honey, soy sauce, and spices to your taste.
  5. Cook till texture of zucchini is to your liking. (I cooked them for about 10 minutes). 
  6. Toss parsley tops and serve.
