Sweet and Spicy Chicken Strips

So we're in the dog days of summer, I'm not even sure where I heard that saying but I like it. It's hot, muggy and with no end in sight, we have to keep the meals simple and delicious. I eat a lot of chicken breasts as I am trying to lose weight and keep putting on some muscle at the same time. My super picky sister even enjoyed these, which is incredible considering most of her meals are toast and cream cheese. I like adding the extra breading to the chicken in egg and flour but you do not have to do that. It can cut down on time and effort. I ended up cooking these on a grill pan on the stove, but you can totally cook them outside on a grill. Well, then enough talking let's get to the recipe.
Ingredients:
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 1 teaspoon peri peri
- 1 tablespoon garlic paste
- 1/2 cup apple cider vinegar
- 1 kg chicken breasts cut into strips
- salt and pepper to taste
- 2 eggs
- corn flour for dredging
How To:
- Rinse and cut the chicken breasts into strips.
- Prepare the eggs and flour in shallow bowls season flour with salt and pepper
- Dredge the chicken in flour, egg, flour.
- Fry in shallow oil, or without the dredge on a grill pan.
- While the chicken is cooking combine the rest of the ingredients for the sauce.
- Heat the sauce through to dissolve the sugar and serve, either douse the chicken in the sauce or serve on the side. (depending on your picky eaters)
