Red Bell Pepper Jam

Well so much for posting twice a week my life seems to not really allow for a schedule of any sort at this time, let's just keep going. I made this jam, and yes it really is sweet and spicy. My mom bought a bunch of yellow bell peppers that were on sale and the result was absolutly stunning.It looked like a box of gold. This recipe is different but absolutly delicious. I would love to make it again and use it as a filling for different things. I would add much more chili and maybe even some fresh chili but my family being very Ashkenazi cant handle a lot of spice. The jam was delicious on challah and would be even better im sure on some toasted bread with butter. It is a great use of not the freshest peppers and a great way to not throw them away. Ingredients:
- 4 red bell pepper (or any other type of bell pepper), chopped in small pieces
- 2 onion, chopped in small pieces
- 2 2/3 cup of sugar
- 2 cup of white vinegar
- 2 tsp of red pepper flakes
Directions:
- Add everything to a small sauce pan and stir all the ingredients until well incorporated.
- Cook the relish on medium heat for 5 minutes and turn down the heat to medium-low for an additional 20 minutes, stirring occasionally until most of the liquid has reduced.
- Remove from heat and allow to cool before serving.
