Fresh Broccoli and Craisin Salad

So a lot has been going on this past week I've been out of commission for a while due to some medical issues, ImbuI'mtrying to keep up the flow of recipes. So on to this delicious fresh crunchy and filling broccoli salad. Now I love broccoli maybe because it reminds me of growing up eating broccoli microwaved with cheddar cheese on top. This salad has a lot of mayonnaise, now I used mayo the time I made it as I was serving it with a meat main course and couldn't use any dairy of any kind. I'm sure you could split it with greek yogurt and sour cream for it to be a bit more healthy.This salad is delicious, fresh, crisp. and goes great with meat and really awesome on its own. There were leftovers that I ate during the week, I added some chicken breast and it was amazing. Give it a go share with friends and let me know what you think. Ingredients:
- 12 ounces broccoli florets (fresh, or broccoli broken into small pieces)
- 400 grams coleslaw
- 1 cup Craisins (1 5-ounce bag)
- 1/2 cup sunflower seeds (toasted salted)
- 1 purple onion (small, grate a small portion of this onion for the dressing and then chop the rest of it for the salad)
- 1 cup mayonnaise (light is fine; no Miracle Whip)
- 1/3 cups red wine vinegar
- 2 tablespoons coarse ground mustard (Creole or other mild)
- 2 tablespoons purple onion (grated, just use the onion you’re using in the salad)
- 1/2 teaspoons kosher salt
- 1/4 teaspoons cracked black pepper
- 1/4 cups white sugar
How To:
- Set the oven to 350 and toast the sunflower seeds.
- Chop the broccoli into medium-small florets and wash thoroughly.
- Grate half an inch of the purple onion on the zester, hop the rest small.
- Mix all the ingredients except for the coleslaw, craisins, broccoli, and onion in a bowl.
- Add all the vegetables and sunflower seeds to dressing. Toss well then let rest at least half an hour before serving.
