Grilled Scallion and Cauliflower Salad

Hey, Whiskers!
Been busy in uni, these past months but finally have a weekend to cook and creates some new recipes. There were too many packages of scallions in the fridge that were on their way to going bad, so I decided to try grilling a few, after seeing a variety of recipes that do so. The somewhat blank canvas of cauliflower balances the intense flavors of the dressing and create a balanced winter approved salad. Enjoy!

Ingredients:

  • 1/2 cup frozen cauliflower 
  • 4 scallions 
  • 2 teaspoons honey
  • 1/2 teaspoon chili flakes
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic
  • salt and pepper to taste

How To:
  1. Parboil cauliflower while rinsing off the scallions.
  2. Start roasting the scallions on the grill pan on medium heat.
  3. After 3 minutes add the cauliflower, grill for another 6 minutes together.
  4. Prepare the dressing with the rest of the ingredients. 
  5. Chop the onions in thirds then toss all the ingredients in the dressing
