Chard and Corn Latkes

Hey, Whiskers!
I made up this recipe when we had lots of greens and I wanted to use the creamed corn we have had in the pantry for a while. The cornmeal creates a delicious crispy crust, and the chard combined with the green onions gives a beautiful burst of summery greens, the creamed corn gives a nice sweetness that balances it out. I recommend balancing the cornmeal with flour to create a creamy balance. This is one bowl, summery green latkes recipe.

Ingredients:

  • 2 heads of chard
  • 1 can creamed corn 
  • 1 cup cornmeal 
  • 1 package of green onions
  • 3 eggs 
  • 1 tablespoon olive oil
  • 1/2 cup flour 
  • 1 hot green pepper 
  • 2 garlic cloves
  • salt and pepper to taste 

How-To:
  1. Rinse and chiffonade the chard and green onions. Chop the garlic and green onions.
  2. Mix the greens and the rest of the ingredients.
  3. Drop in the pan in spoonfuls, cook till brown and crispy.
