Chard and Corn Latkes

I made up this recipe when we had lots of greens and I wanted to use the creamed corn we have had in the pantry for a while. The cornmeal creates a delicious crispy crust, and the chard combined with the green onions gives a beautiful burst of summery greens, the creamed corn gives a nice sweetness that balances it out. I recommend balancing the cornmeal with flour to create a creamy balance. This is one bowl, summery green latkes recipe.

Ingredients:
- 2 heads of chard
- 1 can creamed corn
- 1 cup cornmeal
- 1 package of green onions
- 3 eggs
- 1 tablespoon olive oil
- 1/2 cup flour
- 1 hot green pepper
- 2 garlic cloves
- salt and pepper to taste
How-To:
- Rinse and chiffonade the chard and green onions. Chop the garlic and green onions.
- Mix the greens and the rest of the ingredients.
- Drop in the pan in spoonfuls, cook till brown and crispy.
