Honey Mustard Salmon

It's been a while as life sends its twists and turns, but I'm back with a delicious and healthy salmon recipe. I happen to love mustard my favorite is whole grain mustard but for this delicious marinade the best is classic dijon mustard, it can be made with any mustard but I find the balance between the dijon and the honey to create that perfect balance. Now full disclosure I can't stand dill, like at all its in the same bucket with cilantro. Now surprisingly I still enjoyed this dish-it's not my favorite but the dill doesn't overpower the dish to make it inedible. I recommend serving this with some warm greens either sauteed leaves in season or some type of peas. You can serve any type of starch you prefer like a boiled potato salad, rice pilaf, or some couscous. Let me know how you serve it. Enjoy this simple and deliciously healthy salmon. INGREDIENTS
- 1/2 cup olive oil
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 4 garlic cloves, minced
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 6 6- to 7-ounce salmon fillets
- 3 tablespoons chopped fresh dill
PREPARATION
- Whisk first 6 ingredients in 8x8x2-inch glass baking dish.
- Add salmon and turn to coat. Cover and refrigerate 2 hours.
- Preheat oven to 400°F. Lightly oil rimmed baking sheet.
- Transfer salmon, skin side down, to prepared sheet; Sprinkle salmon with dill.
- Bake 16 minutes till opaque inside.
