Jerusalem Artichoke & Onion Bake

Jerusalem artichokes are a vegetable I have really come to like. The balance of earthy sweetness lends itself to many different styles of cooking. This time I chose to roast them with onions and a simple herb rub. I really love onions and the different types of textures and flavors you can achieve with them. Ingredients:
- 2 white onions sliced
- 6 Jerusalem artichokes
- 4 oz/113grams diced green chilis
- 2 cloves garlic grated
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon cumin
- 1 teaspoon curry
- 1 teaspoon turmeric
How To:
- Peel and slice the artichokes and onions
- Mix the spices and the chilis together
- Toss the artichokes and onions in the olive oil and add the garlic
- Set in baking dish, pouring sauce over the artichokes and onions
- Bake at 375 for 35 minutes until the artichokes are crispy around the edges and soft in the middle.
