Jerusalem Artichoke & Onion Bake

Jerusalem artichokes are a vegetable I have really come to like. The balance of earthy sweetness lends itself to many different styles of cooking. This time I chose to roast them with onions and a simple herb rub. I really love onions and the different types of textures and flavors you can achieve with them. This is a super fast,simple and healthy side dish for both a vegetarian or meat meal. Give it a go and share with friends till next time. Keep whisking up love and happiness to those around you

Ingredients:

  • 2 white onions sliced
  • 6 Jerusalem artichokes 
  • 4 oz/113grams diced green chilis
  • 2 cloves garlic grated
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon curry
  • 1 teaspoon turmeric

How To:
  1. Peel and slice the artichokes and onions
  2. Mix the spices and the chilis together
  3. Toss the artichokes and onions in the olive oil and add the garlic
  4. Set in baking dish, pouring sauce over the artichokes and onions
  5. Bake at 375 for 35 minutes until the artichokes are crispy around the edges and soft in the middle.
