Morrocan style Trout with apricots

Hows it going? Its been quite crazy in my life but I still love sharing delicious homemade meals. I went on quite a fresh fish binge,when I found that my grocery store of choice has fresh fish-mostly daily (israeli style). I liked using bold strong flavors as I found the trout can handle them just fine.Its a great weeknight dinner. Until next time keep whisking up love and happiness

Ingredients:
- 2 medium trout whole
- 1/2 cup water
- 1 cup red wine
- 1 white onion
- 1 whole lemon
Dry Rub:
- 1 teaspoon chili powder
- 2 garlic cloves chopped
- 1 teaspoon powdered ginger
- 2 teaspoons cumin
- salt pepper to taste
- 3 tablespoons lemon zest
- 4 dried apricots sliced
How To:
- Combine the dry rub and set to the side.
- Slice the white onion and lemon, layer on cooking pan
- Rinse fish and place on tray, coat with dry rub then flip and rub other side,as well as inside
- Cover fish with remaining lemons and pour red wine and water at the base of the tray
- Cook covered at 375 for 25 minutes until you can open the fish and see the flesh is white but still moist.
Enjoy with couscous or rice. Serves 5-6 depending on how hungry everyone is.
