Lemon Tuna Spaghettini

I made this dish up on the spot with what we had in the pantry,while keeping it summer welcome. I find that tuna from a can,is a great source of protien and this dish gives it all the jazz hands of flavor without being complicated. I also like fast dinners and I made this in just under 40 minutes and thats in my wheelchair and moving around an inaccessible kitchen. You can add more spices if you like, I loved the simplicity in the lemon that cut through the tuna. Its a perfect Meatless Monday dish,but at any time or place. Ingredients:
- 1 pound spaghettini
- 2 cans tuna
- zest of 2 lemons
- juice of one lemon
- 1 large yellow onion
- 2 cloves of garlic
- salt
- pepper
- olive oil
How To:
- Bring pot of water to boil and make spaghettini according to package instructions.
- Zest and juice the lemons.
- Chop and saute the onion and garlic in pan.
- Combine the tuna with zest,onions,garlic and pepper.
- Drain the pasta when cooked al dente,cover liberally with olive oil.
- Add the mixture of tuna to pasta and add salt to taste.
