Kale and Apple Salad

So this recipe basically turned my family into kale lovers, which for my siblings who are not big fans of greens, to begin with, so it was quite the feat. I love this recipe for its simplicity and freshness. I also just sliced the apple with a knife and it worked just fine, do make sure the apple is fresh and without blemishes as you want the crunch from it. I seasoned it to taste so I ended up adding more vinegar and pepper. This is a deliciously fresh bowl of summer give it a go. Until next time keep whisking up love and happiness
- 1 lb. kale, chopped
- 1 tbsp. extra-virgin olive oil
- 1 tbsp. lemon juice
- 1 tsp. lemon zest
- Maldon sea salt
- Freshly ground black pepper
- 3/4 c. shaved Pecorino Romano, divided
- 1 large Gala apple, thinly sliced
- red wine vinegar, for drizzling
DIRECTIONS
- Rinse kale and chop in small pieces.Slice apples thinly.
- In a large bowl, massage kale with oil and lemon juice using your hands. Season with lemon zest, sea salt, and pepper.
- Using a vegetable peeler, shave 1/2 cup Pecorino Romano over salad and gently fold in cheese and apples.
- Finish with pepper and remaining 1/4 cup Pecorino; drizzle with vinegar and season to taste.
Serve within the hour of dressing the salad
