Thai Coconut Rice and Meatballs

Hey Whiskers,
Long time no speak. So I've been feeling very international these days and not into classics. I was inspired to make this dinner as we had a ton of coconut milk in the pantry and my mom bought dry lemon grass at the spice store. I was actually planning to make this recipe with chicken but Im really glad I made it with meatballs it was delicious. I combine turkey and beef to balance out the fat and dryness in the meatball. I also found they don't need any bread crumbs,while staying together just fine. This is a delicious daily meal or totally fancy enough for Shabbat or hosting guests. Give it a shot it really doesnt take as long as you might think. I didnt make the meatball super spicy as my family has a low tolerance so add to taste. Enjoy! Coconut Rice
Ingredients:

  • 1 1/4 cup brown rice
  • 1 cup coconut milk
  • 1 1/2 cups water
  • 1 tablespoon dried lemon grass
  • 1 teaspoon maple syrup

Thai Meatballs
Ingredients:

  • 400 ml coconut milk
  • 1/2 tablespoon a bunch of dried lemongrass
  • 200 ml sweet chili sauce
  • 2 medium white onion chopped
  • 2 cloves garlic chopped
  • 1-kilo ground turkey and beef combined
  • 1 egg
  • 5 green onions-chopped fine
  • salt and pepper
How To:
1. Start with making the rice: Rinse rice till water runs clear then combine all ingredients,and bring to a boil,then let simmer till done
2. To make the Meatballs: Start with combining the coconut milk,lemon grass,sweet chili sauce in a sauce pan,bring to a simmer
3. Combine the rest of the of the ingredients in a bowl and roll out meatballs.Add to sauce,Cook on medium low heat till cooked about 25-30 minutes. 
Serve hot with rice under the delicious meatballs. Serves at least 4 with leftovers.
