Simple Spicy Carrot and Kohlrabi Salad

So salads,you love and hate them. The freshness is great but sometimes it can get boring if we make the same salads all the time. Now my family is a big fan of carrots and I love kohlrabi for its added freshness and bulking up on the vitamins and texture. So this recipe is a combination of a bunch of stuff I like salads,fast prep time,spicy food (can't live without some good spice),and simple. This combination can't be beat,feel free to add the amount of harissa or other spicy paste,to your taste.I thought the spice was ok,I could have taken more but my very Ashkenazi parents aren't huge fans of super spicy food. I made this for Shabbat and had leftovers for during the week it was delicious even as the week went on,the veggies managed to not loose their snap for a good while. Ingredients
- 1/2 kohlrabi (bulb, sliced with a mandolin)
- 10 ounces carrots (matchsticks)
- 4 cloves garlic (minced)
- 1/4 cups extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon ground coriander
- 1 tablespoon liquid sweetener (agave, maple syrup, or honey)
- 1 tablespoon harissa
- 1 teaspoon salt
- pepper (to taste)
How To:
- Peel and chop the kohlrabi and carrots in a thin matchstick fashion.
- Mix all the other ingredients into the bowl and toss.
Its great straight out of the bowl or left to marinade for a few hours.This is great for any time of year,and seriously simple to make.
