Spanish-Style Tilapia

Sorry I've been busy and sick so haven't been cooking much. I made this tilapia last week as I was looking for something different,then my moms-good but classic lemon pepper in the oven. So I was researching and found this great Spanish style tilapia recipe from Marcella on the food network. Of course I still threw my own twist and edges to the recipe,giving it a bit more bang but its a great simple stove top recipe without to many odd ingredients that you wont have in your pantry's already.Enjoy

Ingredients
4- Fillets of Tilapia or any white white fish fillets
1 medium white onion
4 medium cloves of garlic
1 large can of crushed tomatoes
3 tablespoons olive oil
1 Chili-(any type is fine)
1 Bay leaf
1 teaspoon dried oregano
1/2 cup pitted green olives
1/4 cup capers
Salt and pepper to taste

How To
1. Sear off the fillets of fish in the pan with oil,salt and pepper to taste, then remove from pan and set to side.
2.Heat the remaining oil and add the chopped onion and garlic,cook until onion is clear.
3.Add the chili,crushed tomatoes,bay leaf and oregano,and bring pan to boil.
4. Reduce the heat to a simmer,then add the capers and olives.
5.Let cook for 10 minutes till fish is cooked through.
Remove and serve immediately. Can be served over rice for a full meal. Simple,delicious,easy,healthy food.

Its a great easy dinner or lunch,can be kept but not for too long.
